BANANA NUT BREAD
Good for breakfast, snack or dessert.
1/4 cup honey
ghee to grease pan
2 tbspn safflower oil
3 bananas
1 1/2 tsp vanilla extract
2 eggs
1/2 cup whole wheat flour
1/2 cup buckwheat flour
3 tsp baking powder
1/8 cup pecans
Pre-heat oven to 350°. Grease loaf pan with ghee (9x5x3 is good for this recipe). Sift flour and baking powder. Set aside. In bowl mix honey, oil, vanilla and eggs until smooth. Add bananas; beat until smooth. Stir in nuts. Pour batter into prepared pan. Bake about 1 hour or until fork comes out clean. Let cool 10 minutes; remove from pan
